CHEESECAKE FROM THE RESTAURANT LA VIÑA IN SAN SEBASTIAN

Ingredients for 5-6 people:

  •  500 g cream cheese
  •  4 eggs
  • 200 g sugar
  • 1 heaping tablespoon of flour
  • 250 ml cream

Preparation of this famous cake from La Viña restaurant in San Sebastián:

Prepare with wet and crumpled greaseproof paper a removable mold for cakes, the wetness helps it to fit more easily into the mold.

Preheat the oven to 210ºC (410ºF)

In a large bowl, mix the cream cheese and eggs gently with a fork to avoid lumps. Then add the sugar and continue mixing. Take a whisk and add the tablespoon of flour and again mix gently, then add the cream. Mix without stirring, gently until a homogeneous mixture is obtained. Pour into the mold and bake in the middle of the oven for about 35 to 40 minutes, so that the center is just slightly firm.

It is vital to let it rest for at least 4 hours before unmolding. It can be served with some Fabbri amarena cherries.
