CHICKPEAS AND PEAS HUMMUS
Given the gratifying effect for the spirit and body of a good cool and vegan recipe for these high temperatures, I share with you this tasty recipe of mine, a variation of the traditional hummus. It is easy to make and a great success in family and friends gatherings, I am always asked to make it.
Ingredients
- Chickpeas 500g
- Peas 200g
- Spring onion or red onion 1 pc.
- Garlic 1 clove
- Tahini 4 tablespoons
- Cumin 1 tablespoon
- Salt 1 tablespoon
- Turmeric root 3
- Parsley 40g
- Paprika 1 tablespoon
- Lemon ½ squeezed
- Virgin olive oil 3 tablespoons
Put a good variety of seasonal chickpeas that have been soaking since the day before, with the fresh peas (can be frozen), in a pressure cooker (10 minutes if it is a Kuhn Rikon one, it might vary if you use other style of pressure cooker).
Mix with the rest of the ingredients in the Thermomix until a homogeneous paste is made.
Serve chilled with bread "regañas", breadsticks, tacos or grissinis, for dipping!
Note: Another variation could be made by adding avocado and cilantro instead of parsley.
