GARLIC SOUP


Ingredients:

  • 1 tablespoon of sweet smoked Spanish paprika
  • 1 tablespoon of tomato powder
  • 2 heads of red garlic from Las Pedroñeras
  • 1 L of chicken broth
  • 250 gr serrano ham in tiny cubes
  • 50 ml olive oil
  • 1 slice of bread in pieces
  • Salt and pepper

Heat the chicken broth until it boils, set aside.

Meanwhile, fry the garlic (with its skin and cut in half) over low heat, remove and fry the Serrano ham and bread in the same oil.

Add the garlic again, add the paprika, being careful not to burn it (otherwise it would become bitter), quickly add the hot broth and the tomato powder and let it boil over low heat for about 15 minutes. Add salt and pepper to taste.

It is tastier from one day to the next.

Optional: add poached eggs.
