

Huancaína Potatoes
Tauantinsuyo dish par excellence.
Ingredients:
- 3 medium potatoes
- 1 tablespoon of coarse salt
- 115 gr evaporated milk
- 5 soda crackers
- 115 gr fresh cheese
- 2 tablespoons or to taste of aji amarillo bell pepper paste
- 1 teaspoon of palillo or coloring
- 2 hard-boiled eggs
- 2 heads of lettuce
- 5 botija olives
Boil the potatoes with their skins and coarse salt for half an hour.
Meanwhile prepare the sauce. Put the cheese, the milk, the crackers, the coloring and the ají paste in a blender and... blend.
Put a bed of lettuce, the sliced potatoes, the hard-boiled egg, the olives and pour the sauce on top.
