Il Dottore Marquinetti
I am not one prone to recommend places to eat, because among other things with COVID-19 and other issues I do not visit them, but in this case I think it is appropriate to point out a place where you can find the best pizzas I have ever tasted and a chef who is worth his weight in gold.
In Tomelloso, birthplace of the famous painter Antonio López, there is a restaurant on an avenue with beautiful trees (I think they are acacia trees) where you eat and are treated wonderfully. And when I say wonderfully I am not exaggerating, in the last visit the chef explained to us during almost half an hour on the terrace in full heat some of our doubts and part of his recipes. We already had his book, which I recommend to anyone who loves pizza like me, "La Pizza es Alta Cocina" by Jesús Marquina, a book in which you can appreciate his skills, which have earned him many international awards, as well as the nickname of Il Dottore Marquinetti by the Italians themselves.
In this place it is necessary to book because people come even from abroad, something somewhat shocking because La Mancha is an area usually not crowded with tourists, (better for those of us who appreciate it), in addition to the restaurant, D. Jesús Marquina teaches classes. The times we have been there we have always been treated with great attention and delicacy, but on this occasion has deserved this post of gratitude, because it is not usual this generosity in someone who already has everything. The pizzas are all extraordinary and then there are starters like the one we had called "putaditas" that I would have eaten a dozen in one sitting or the squid noodles with boletus that are a delight.
In short, it is well worth the trip and from here we thank him again for elevating the real pizza as he says to haute cuisine and teach us how to make a decent pizza despite having a small oven at home.
