Migas Ruleras

Ingredients for two persons:

  • 2 peppers
  • 200 gr Candeal bread from the previous day
  • 1 head of red garlic from Las Pedroñeras
  • 10 ml olive oil
  • Salt
  • 50 gr spicy chorizo de León

In a saucepan confit the whole garlic cloves whole with their skins with olive oil over low heat.

Add the peppers cut in mirepoix and fry in that oil. Turn off the heat when they are done.

Cut medium pieces of bread and soak the bread in water, drain the water and try to squeeze it into little breadcrumbs. When you finish, add them to the pot with the peppers and garlic, salt them and stir until crumbs are more or less crunchy (to your taste). Then add the chorizo chopped in small cubes, stir it a few times and that's it.
