ORANGE CAKE À LA JUANI/LUIS
My favorite sponge cake is the orange one, my aunt Juani was the first to give it to me to try, here I transcribe a kind of recreation, a mixture of the instructions to make cupcakes of the specialist in the matter, Luis Olmedo, whose blog is a wonder (https://www.myeuropeancakes.com/2017/10/11/madalenas/ ), and the one of what Dña. Juana patiently explained to me, who cooks wonderfully. A greeting to both and here I write what was done.
Ingredients:

250 gr flour for cakes
235 gr. Vegetable oil (I used sunflower one)
240 g sugar
4 eggs (aproximately 200 g)
16 g Leavening agent (I used Royal one)
1 pinch of salt
2 oranges
A pinch of butter and a bit of very fine breadcrumbs
A few pine nuts
Proceeding:
Preheat the oven at 210ºC (410ºF)
Grease with butter and sprinkle the mold to use and put some pine nuts in its bottom.


Firstly the whole oranges are cut in pieces with all their skin and they are made a puree with the mixer. Then mix the resulting orange puree with the oil and sugar.





Add the eggs and salt, beat briefly, about 1 minute or otherwise it will turn into a mayonnaise.

Prepare and sift together the flour and the chemical leavener or royal yeast. Incorporate the dry ingredients to the wet ones, that is to say, incorporate the flour+chemical leavener to the mixture of egg+orange+oil and mix with the rods of the mixer.


Pour into the prepared mould.

Bake for about 45 minutes (check with a wooden stick after 35 minutes or so, if it comes out clean, it's already there).


Let cool and demould.
