POTATOES WITH SHRIMP or PRAWNS according to Thermomix Vorwerk recipe

Fumet:

  • 200g shrimp or prawns
  • 400g water
  • Ingredients (5 portions)

Sauté

  • 70g oil
  • 200g crushed natural tomato
  • 1 tbsp Spanish Pimentón de la Vera
  • 100g red pepper
  • 100g green pepper
  • 150g onion
  • 2 cloves of garlic

Rest

  • 1 kg potatoes, peeled and cut into small pieces
  • ½ teaspoon nutmeg
  • 2 fish stock cubes
  • 1 bay leaf
  • 1 teaspoon cumin
  • Pepper
  • Chopped parsley

Procedure in Thermomix

Place the shells and heads of the prawns in the Thermomix vase (reserve the bodies), together with the water and program 5 minutes, 100º, speed 4. Strain and set aside the fumet. Wash the vase and the lid.

Put the ingredients for the sauté in the vase and chop for 5 seconds on speed 4. Next, program 10 minutes, Varoma temperature, speed 3 ½ . After 2 minutes, reduce the speed to 1. Using the spatula, remove the remains from the walls and the lid.

Put the butterfly on the blades and add the reserved fumet and the rest of the ingredients, except the prawn bodies and the parsley. Program 23 minutes, Varoma temperature, turn to the left and speed spoon. When finished, add the prawn bodies and leave to rest. Adjust the seasoning. Sprinkle with chopped parsley and serve. Ready!.
