Scandinavian Chicken Stroganoff
Ingredients for 4 people:
- 2 leeks
- 3 chicken breasts
- 200 g mushrooms
- 300 ml cream
- 2 glasses of white wine
- 2 broth cubes or pastilles
- salt+pepper
- juice of 2 lemons
First cut the chicken breasts into thin strips, then heat the oil in a frying pan and brown the meat on all sides. Add the leek and fry for about 15 minutes.
Add white wine and the broth cube or pastille and when it is a bit reduced, add the cream also for a few minutes, salt and pepper.
In the meantime fry the mushrooms in another pan, try not to overcrowd them otherwise they will boil, because they release a lot of liquid, when they are ready, mix everything.
You can accompany this dish with basmati rice or with Rösti, (not to confuse with the Caribbean Roti, which is a different dish).
Rösti Recipe
Ingredients for aproximately 4 persons
- 1 kg potatoes
- 3 tablespoons butter
- 1 teaspoon salt
- 2 tablespoons of milk
Cook the potatoes in their skins the day before making the rösti, half cook them.
The next day peel them and grate them with a coarse grater. Heat the butter in a frying pan, add the grated potatoes and sprinkle with salt. Use a spatula to press them into the round shape of the pan. Sprinkle with milk and cover the pan tightly. Reduce the heat as soon as the potatoes begin to sizzle. Fry over very low heat for 30 min. in a non-stick frying pan. During this time a golden crust will form. Cover the pan with a lid or plate and turn it over halfway through the process.
