Ullucus Tuberosus - Olluco

Tuber native to the Andean region of South America.
The renowned Chef Gastón Acuario has several recipes for this tuber similar to a small potato, but very different in taste.
This one I am writing today was an improvisation of mine.
Ingredients:
- 1/2 teaspoon salt and pepper.
- 1/4 teaspoon Harissa
- 1/4 cumin
- 50 ml sunflower oil
- 1/2 teaspoon oregano
- 2 cloves garlic
- 1 onion cut in emince
- 500 gr ollucos cut into julienne slices
- 1 sprig of chopped parsley
- Optional padron peppers

Heat a frying pan or pot, pour the oil, sauté the onion, after about 10 minutes add the chopped ollucos and season them with salt and pepper, sauté for about 15 minutes together with the padron peppers.

In a mortar crush the cumin, garlic cloves, harissa, oregano and when they are finished add this together with he parsley.
